From potatoes and pasta through confectionery and bakery products to vegetables, fruit and jam. The preparation and monitoring of the cooking process is in many cases an important production step.
Sweet, sweeter, sweetest - a Brix measurement tells you
When mixing and cooking e.g. fruit (for jam), caramel, chocolate or other sweets, the concentration of sugar is the decisive parameter. The sugar concentration is measured using an inline brix meter. It is installed in the boiler to permanently monitor the process: from mixing the various ingredients to determining the end point of the cooking process.
Choose a sensor that meets your requirements, is easy to clean and doesn’t form an obstruction for mixers or agitators, for example. A brix measurement is ideal for applications in the food industry because the measurement is not disturbed at all by solid particles, fibres or air bubbles.
Eating with your eyes - Colour measurement ensures consistent quality
During the cooking of food products, the colour of the product changes. Of course, you want the final product to always be the same colour. Using a photometer or colour meter, you always know how the colour changes during cooking and when the desired colour is reached.
